Here is an update on my progress. I experimented with sour dough methods. I found the "discard" to be necessary because it has no bubbles. It is not impossible, but very difficult to make yeast from discard. The front right, smaller jar was made with a few T of discard, 1/2 c flour, just under 1/2 c water - and it grew fast, in one day! Whereas, I have to keep feeding the others. The jar behind the small jar began growing and I had enough yeast to also make bread. (Two loaves)

Today's loaves are doing well. The right loaf was made first, using the recipe on sour dough sandwich loaf bread. The left was discard which began growing after I added some honey. I made that loaf about an hour after the first. I did not give it more time than the first loaf since they were rising for hours in the bowls. But they were different in size. So I am giving the left one more time to rise in the oven and I will show more pictures. - posted 6/24/2023 


The next time I make bread, I will use larger loaf pans to see if I get a better turnout. I turned the oven on to 425° and will bake the larger one now and give more time for the smaller one to rise more.  The yeast would probably grow more evenly if I had more room to roll out the dough evenly, before hand-rolling and shaping.

10 min on 425° F only: Turn down to 375° F for 20-30 min. Tap it to ck if it is done. 
I even turn it down to 360° so the crust doesn't get too hard. 

 Nevertheless, this bread is much healthier. Get whole grain bread if you purchase it at the store. 



Here is my first loaf. The second one is almost risen to my liking. Notice the difference. First loaf, I used my sour dough starter that I created from discard the day before. It was ready because not only was it growing well but it floated in cold water. But I don't know why holes formed. I stopped letting it rise because it was separating like that. Notice the second loaf is much better in shape, rising. I used King Arthur flour for both, and distributed the flour using a sifter. I didn't measure it. About 3 c each time. Remember, the starter is made with flour. I hope I can figure out why this second one turned out so much better. This was the discard sour dough that I have been feeding for weeks, and it began to grow unexpectingly, so I made a loaf with it.

      I added pickled onions to a vegetable soup I made. So this low-key canning method has advantages - preserves food at a budget, in my small apartment. I don't have space for a canner, etc. They go in the refrigerator till I use them. Great for soup.

Mary's Nest explained that you can actually dehydrate this starter, to make bread with later. Make sure you have silicone packets first, to add to the jar. These jars in the background are all sour dough starter. Another one is growing, too! 

Bread is such a good staple, when made properly. It stretches all meals. Maybe next time I will twist some bread sticks. They can be put in the freezer , to use whenever you want. The bread has melted butter on the crust. The butter was so soft I used a pastry brush to apply it. 

First ten min: 425°, then 25min at 375°


I sprinkled with chia and flax seeds, plus some no-salt seasoning. I added these seeds to one of my dough starters. Will see what happens. This way of baking can really be a variety of ways once you get the hang of it. I have a Bella bread maker too! LOL. It also makes yogurt, jam, etc.  No muss,no fuss. 
     Update 16Aug2023: My Bella was vandalized. Best Buy didn't have them anymore. They gave me my money back, through store credit.
      Update 9/23/2023 - my Bella Bread Maker was vandalized again! The illegal intruder took the piece that rotates the bread pan - they did the same damn thing before as well! And Best Buy had no Bella replacements but gave me a full credit and offered to help me order one from another store. I thought, what's the use! These crooks come and go out of my apartment all the time, and the landlord doesn't care! So I got some cyber supplies. 

I need to see how the Queen of Cooking, Martha Stewart, does this.

14. Sour dough starter has some variables

Day 1
1/2 c whole wheat flour/any flour
1/4 c warm water (purified, remove chlorine by boiling night before) 

Optional: add 1/4tsp salt, 1tsp honey - both, one of them, or none at all 

Day 2
Observe bubbles
Day 3
Skim off hooch (brown liquid) or leave it; it's up to you
Feed the dough starter using same amts as beginnng; 
Day 4
Repeat Day 3
Split in half (your discretion) 
Use discard for banana bread, pancakes,  whatever 
Day 5-6
When starter rises really high, feed it again - same amount as orig or 1Tbls, about 3/4 T water - always have consistency of pancake batter

Feed it when it needs it πŸ˜†

Day 7
It should be ready to use to make bread. Test it by placing a spoon of it in cold water. If it floats, it is ready.

Another way to feed it is 1T flour, 3/4 T water, ck every 4 hours.

Sandwich Loaf Sour Dough Bread - one loaf

1 c warm filtered/purified water
1/2 c sour dough starter
Mix well 
1/8 to 1/4 c olive oil 
1T honey 
Flour - your choice 
3 to 3 1/2 c - flour varies. The more dense, the less volume 
Get to a good consistency 
    Shaggy - add 1tsp to 1 1/2 tsp salt at this point. Add flour to form a smooth ball
     Fold, fold, fold - you will see how it forms an elasticity 
      Spray bowl with olive oil, set ball in overnight
      Morning: Punch down. Place on floured board, pull the corners up and over, one by one. You should see the elasticity and this folding encourages more growth. Shape, roll tight for bread pan. The tightness keeps bubbles from forming in the loaf.
Rise - to double - may take a few hours. Watch it. 
 Optional:  Brush top with some egg, shake some chia, flax, or seseme seeds on top.

425° oven - bake 20-30 min (I did it this way, but watch it because it could burn) 
Or 425° oven first 10 min, reduce to 350. Take out when done. 

       Stretch and folding, every 30mim for 2 hrs - may be a method you will like

The sourdough suds were scaling up the glass so I went over it with a spatula and an hour later, this is growing like crazy! When I wake up, I will need to use it for a  recipe, I'm sure. Rose mentioned she has a new recipe, making donuts with sour dough! I bet they would be great cooking in an air fryer.  
This is my THIRD rise. The bread will be wonderful. The dough had a lot of bubbles in it, which is a good reflection of being healthy. But I like a smooth bread for daily use. I rolled it with a rolling pin  and tightened the dough while rolling it up by hand, like Rose emphasis to do. The clean dishcloth is not used for cleaning - only baking or making sour dough starter. This should continue to shape well with that help. 
Why? Why? Why? 

I fed my starter this time and it took off like crazy. An hour later it isready to use.I wanted to work on my appendix. Mary's Nest actually tells you how you can preserve your growing starter, including a dehydration method. I haven't watched that video yet!My bad! So what do I do....eeny, meeny, miny Mo!
I decided to roll in dough!  

The rising loaf is almost ready to bake. 

And look what happened again! It grew in an hour! Maybe 2 hrs! 
You have to use it or lose it - unless I do what Mary's Nest suggests to save it for later. Well, I better find out! This is one monster starter!

My bread loaf is turning into a bread blob...I don't think I put enough flour in it. Shaggy dough is good when you use a dutch oven and make round

bread but sandwich loaf sour doughneeds enough flour so it puffs instead of blobbing. I sprinkled flax and chia seeds on top.

are gone, except one. I had 4. I also had 6 netted liners and I don't think anyone stole any of those. 
I used parchament paper on a netted liner. I hope it works. These layers dried well after a few hours, set on 130° I broke the pieces up and put them in jars. Spread it thin, like ribbon candy, before you dehydrate. 
The bread is soupy, it will not rise anymore because it needed more flour. So I am baking it. The dough is rising well. This time I will add at least 1/2 c flour. The yeast is quite active. Don't underestimate it. I used 3/4 c sour dough starter and next time, I will use 1c like Mary does..and about 5 c flour for a hearty large sandwich loaf. Experts may surmise I used too much flour, but I really think I didn't incorporate enough flour. After one hour first rise, I pull the corners, stretching the elasticity of the dough, turn, stretch, for about 1 minute till the stretchiness is almost gone.  That incorporates it. This loaf I'm baking now was limpy. I admit. Now I pay the price for not adding more flour. 

I did it! 

Secret: I used 1/2 buttermilk and 1/2 warm water in the recipe. I still added honey. Used about 4 1/2 c to 5 c flour. Wheat flour was used on the starter; white flour in the recipe.

Holy crap! It never gets this big. The widget won't let me change it's size or position here. I don'tknow why that happens 

I woke up to rollin' in dough! There isn't anything on the front of my stove. The technocracy are up to their tricks. 


Holy loaf liquor! I added some of The vanilla (with Mexican bourbon)  I made to give the sour dough a little kick - and wow, it kicked back! 

Too much excitement for me! 🀣 



It tastes pretty good. 

I made oatmeal bread yesterday because I ran out of flour and was stuck. It rose beautifully and quickly. I left my apartment, came back and figured it would rise well in the bread pan. It was doing very well but I was sleepy so I took a nap and checked it when I woke. It wasn't rising! I left it the night, figured things would
 straighten out but didn't. So I took it out and worked it up some, put it back in the pan. It is rising slowly. 

PS - I cheated and used my dough hooks. If it's good enough for Martha Stewart, It's good enough for me!

It's cracking up...so I mended it....9:30am ....

Now it's 12pm and has a way to go yet! I wanted to go where my storage unit hasbeen for ten years!

Those thieves would not reinstate my lease so I could continue paying rent! They wanted me to pay without a lease! Those frauds! The co-founder is in prison (supposedly, but CIA may have given him a new identity and made him a fugitive from justice because they do that!)  For life for raping and molesting children, polygamy and he did more - but did the courts really care? I doubt it! It was all show, I expect! His name is Warren Jeffs, veryhorrible person! His partner's last name is HOBIT, William Hobit, I think. I doubt he is legitamate! Probably a pedophile-rapist too! 

All my things barely left from my life! I They stole all my possessions with Public Storage in 2010! I rented a 10 x 10 unit for 9 years, suffered a heart attack from lead in my water, they poisoned my cat and she died at the hands of a horrible vet who wanted to kill her! 

This country is not free! The courts in Comnecticut do not follow laws or rules! And the US Supreme Court supports lawlessness! You don't see them hold anybody accountable for #September11 even though Americans murdered Americans that day! 


So, my bread was rising great,but they did something to the oven to keep it from rising. At 4am I took it out of the oven. The dough wasn't even level with the edges of the pan. It began growing once out of the oven, so they must use some kind of radio or electric waves to stop the rising! 

     I think it is gas - my oven smokes up when I open it after it is preheated. Sometimes it sets the smoke alarm off and I have  to open the window and turn the fan on.  They use gas and electricity to run it. 

The picture uploaded but doesn't show here...now it is - see how the bread is rising well, now that it is out of the oven...I am trying to save the oatmeal bread - it rose so well but they do something to the oven to stop the rising! This is my last attempt to save the dough...I added so much flower and other ingredients, It is enough for two loaves. ..I just cannot believe this about the bread! They devised something to remotely control even this! This loaf is rising so well now. 

Now, omg! 

Something stopped the rising of my dough - I put three loaves in the freezer. I took one out yesterday and it is rising now - slowly but surely - but will this smart dust interfere again? I think that is what it is interfering - smart dust. I placed my most recent rising loaf on the cupboard when I noticed it stopped rising - and it took off rising again! I should do the same thing with this. 


     Delicious! And so healthy!

Now today, the dough rose fine on top of the oven. I put it in the bread pan and placed it inside the oven and it crinkled! I may reshape it for pizza dough, and precook it. 
Update: The crust was too tough. I broke it up and froze it but frankly would feed it to squirrels or birds if I could.

September 11 - BBE (best bread ever) but when I put it in the oven, it fell! I don't even have it rise in the oven turned-off  because some kind of energy keeps it from rising now. 

It still tastes good, though. 

The loaf was  2 inches higher than the pan - this photo was altered.  
The dough droppped 2" after I put it in the heated oven. 
It tastes good but got flat. Some kind of man-made energy is interfering.

I took my frozen sourdough out last night. It has begun rising but the top is flattening so I am going to take it out and fluff it up, let it rise again. 
The dough was possessed with sour dough starter, lol. It rose all over, even got bubbly. I thought, the only choice I see is to make a pizza crust with it. I used a cookie sheet and the crust was too thick - so I got out "my" large pizza pan - which the illegal intruders switched to a beaten-up pan! I bought it new and it only had a few scratches. This one is rusty and worn out. I cleaned it and used parchment paper. 



I baked it at 400° for 10 min. The person I gave it to can put whatever meat they want and bake it the rest of the way. I wish I had advised her sour dough is sensitive to baking; using a lower temp and less time needed to bake. 4 different cheeses are on it. 

   This bread appears to be shaped like a cake.Good as an English muffin-type toast, grilled cheese sandwich, with baked beans, and more.

       Note, I found 1 c plain yogurt to 1/2 gallon (1.89 Liters milk , cooked on low for Two hours, 
Set for 3 hrs, add yogurt to a cup of the milk, mix thoroughly. Add to.crock pot. 
then let set for 12-24 hrs, stirring occasionally, will result in Yogurt. Very smooth, thick.You do not need to strain anything!) Video-makers, please try this and share if it works for you. Psst: I had some whipping cream left and put it in. 

Psssst: TONIGHT I FORGOT TO TURN THE CROCK OFF UNTIL 3 HRS PASSED. ...I chopped up onion and added some herbs, and I used a hand mixer and infused the cheesey-soup and have been "eating" it like soup. Tastes fine. Glad I didn't have to throw it out after making that mistake. 


Sourdough EXPERIMENT
STARTER MADE WITH ACV, apple cider vinegar! Maybe when I discarded and added 1/2 c flour, I should have continued with ACV but I used 1/2 c  buttermilk and 1 c warm pure water. It grew like crazy! 



I had to stay up so I could bake it. It is 3:20am. Oven is warming up now. Sourdough bakes faster than yeast breads and also at lower temp. That is my experience. 

It will be tasty, I'm sure! Next, I think I will take a crack at making sourdough starter with marachino cherry juice!

Pssst: why is my sour dough rising so fast? Because I want to sleep, that's why. Some say it should rise twice before you put it in the bread pan. I am just going to put it in the bread pan after I fluff it up. This is sour dough starter with whole wheat flour and some white flour. Buttermilk, too
but I have no clue what else because I didn't label it. And that's the truth. 😜

Today's BREADFESSIONS 
I do not know what is going on. Most likely my sour dough starter isn't strong enough. The bread has a good rise, then I put it in the bread pan with plastic and a towel over it. The bread already baked didn't rise much and was denser than my head.  This was altered by CYBER CRIME. I just happen to catch it. All I can say is, if a sentence makes no sense like this one, it's not me who said it. That is what makes this platform particularly frustrating: corrupted TECHNOCRACY. Today. I wanted to make more because I just didn't like that dense bread. It rose and when I took the plastic off, it fell and wouldn't rise anymore. I thought about reshaping it to do a third rise but experience tells me that is risky; it will become  dense as what I already got. 

Maybe my flour was vandalized when I was out a few days ago. I hope not.
 
Solution update: stretch and fold the loaf 3 or 4 times, every half hour. Then let it rise on its own. It makes the loaf shape better, taste better. For this 2-loaf batch, I only streched it 3 times. One loaf had a loaf quake but it will tast me just fine and also be in good shape to toast if you want. 


I do not like to waste food but I would not give this to a homeless person. I thought about making hard bricks from them, maybe promote a charity by displaying its name on them and someone could use them as paperweights.

πŸ€£πŸ˜…πŸ˜†πŸ˜‚This is a bread casualty from my past. I did not poke the holes. It was obviously vandalized using one of the tools in my clay 'carving' set. 
I glued leaves to the bottom piece and painted a Home Depot wood glue on it to harden it up. It should get another coat now, though. It's dry and hard to clean. I store pencils, pens, markers in it. 

The bread I made a few days ago was very much like the yeast-fail above:

This  one  fell but it is a good texture, spongy like bread should be. I need to use wax paper, or parchament paper to cover it. I keep forgetting.

My Drunkin Donuts are rising now! Mary mentioned she adds yeast to her sourdough sometimes to get it to rise properly. So I tried it with these donuts. The sourdough starter was fabulous, but maybe the milk I added was clashing - it ws turning into a rock! But it is rising now! 

I figure it will be ready for the net step in a few hours.

This was one crazy starter! I am dehydrating most of it, but fed remainder to keep it going. I do not know why I have so many jars of the starter, but I got them all out and decided to get them going and I will dehydrate most of it. Makes nice gifts, I figure. Thanks to Mary's Nest for that instruction! 

This dough was mixed 18 hours before! But I added the proofed yeast and mixed it with my dough hook for almost 10 min and it is rising - slowly but surely!

I rolled them in cinnamon and sugar. Two trays - I think I had more dough because of adding the yeast and adding whole wheat flour, maybe 1/2 cup, little by little. And no holes to bake, which added to the dough. 

So, I am staying up till they are finished. My fridge has no room for the cookie sheets....See you tomorrow, which is about an hour from now πŸ€£πŸ˜…πŸ˜†

I got so sleepy - but the timer went off and woke me up. So I put some in the air fryer after spraying olive oil on the rack. I set it at 350 but timed it for 8 min just incase. 



It tastes doughnutty, but I cooked it too much. So I turned the temp down to 300, at 8 min....
They were a tad too much cooked. 
Next batch, I set it at 300....

This is what 300• doughnut look like. A softer consistency. 
Next batch, I sprayed the tops with oil...

They are all sprinkled with cinn and sugar before they were set to rise, fyi

I like the ones sprayed on the tops and cooked at 290• for 8min the best...


Total donuts: 15. I ate some and last batch is in fryer now. 

I gotta say, it took longer to cook them all this way. I suppose you could spray olive oil on the tops you bake, too. 

Meantime, this is what my sourdough yeast turned into. And you break it up and set it in containers. Probably separating the types, since I like to experiment, creating different strains..but I should have labled them. I'm sure they will hydrate well with buttermilk or water. The other time I dehydrated, I just combined it all and put them in jars, so I will never run out. I suppose I could have powdered the yeast and spruced up the donut dough with that when it wasn't rising...I just knew the yeast trick worked for you and others stated they agreed, so I wanted to use a sure thing. 

I think I will use my sanitized plastic margarine containers to put these in. But how much do I tell them to use? I suppose I will suggest one half of it, to make one loaf of bread. It was about 1 1/2 c of ea that I dehydrated. Maybe they could use less, and just add 1/2 flour and enough  water. 



       BEFORE WASHING YOUR JAR/S ...

This is liquid form. What I do is, to save every bit of the sourdough starter, when I think of it, I put very warm water in the jar, and cover it and shake it 🎢🎡 shake - shake - shake🎢🎡🎢 like Taylor Swift's song! 
I go from jar to jar doing that, collecting as much as I can - and undoing what I said about keeping strains apart! Lol πŸ€£πŸ˜…πŸ˜† 

You can use this to substitute for water or milk - whatever you hydrate your sourdough with.

I left the rubber band on it because I was lazy...it had starter in it. Now my jars are reduced to 2 - man, I had about 10 going! I am dehydrating all the sourdough because they were all growing and bubbly. I feel like a mad scientist now!

😱 I created a sourdough monster! I put the jar in the fridge! I have a week of bread I need to eat! And I am overwhelmed with errands, problems, and what-not! 



The refrigerator somehow interfears with taking a clear picture....

Well, you should be able to notice I have almost a full loaf, though the picture is very blurred because of TECHNOLOGY ,- Simply opening my remote-controlled appliance. Ugh! 

What do you do if you are out of whipping cream but have milk and butter?

     I do not care for that idea - not for a dessert. I wondered if it could be dehydrated but a few people made comments about risky experimenting with milk products. A powdered form is commercially available, like powdered milk - but it is expertly-treated.

Today I made "My sourdough went on strik so I had to add yeast" bread. It has a tangy kick to it, which I consider in the tolerable range 😬 If it wasn't For The Rose Homestead. This bread would be dead 🌹

I don't use that side of the stove for cooking; and tape the controls. They happen to now manipulate controls so they don't even move and the heat will go from Simmer to boil. Here I was making sweetened condensed milk, (which btw, does not work well for Vietnamese yogurt - the canned makes all the difference in the world.)  The milk went from simmering to boiling AFTER I walked away from it and I could see the burner got hot when I smelled it burning - yet it was still on simmer. That is CYBER CRIME. Meantime I repeat a process of baking soda and Dawn, heated on simmer to medium, take off when bubbly, orvadd white vinegar and let cook a couple minutes,   place in dishwasher, and slowly but surely it is coming off. 

I didn't want donut holes, so I made them like this...
I iced the sourdough donuts but they were too dense to give to someone. The recipe rose first time and donuts rose but I guess I compare them to Bob's Donuts - his fried donuts were the best in the world. My father and I would get them for his coffee wagon and treated ourselves. Cinnamon and sugar. I made mashed potato donuts later, for my store. They turned out good but Bob's were the best. I wasn't in his commercial territory.

And my stovetop was a casualty since the milk and sugar ran over. 
The baking soda covers part of it, but this is what it originally looked like a few days ago. I just keep repeating the process because I know scraping it will harm it. 

This was ALL BLACK to begin with - here I had just cleaned a smaller pan for the same reason! They remotely turn the heat up! And they wait iluntil I am away from the stove, so they are spying on me - one of the reasons I do not use these LED lights they installed! 

Update - the pot looks okay to cook with again now.









      I wish I had that dough! I would make more Halloween decorations!

First hour of sourdough bread-making...using GOLD MEDAL  all purpose flour, and it is rising. I do stretch and folds after first hour because it incorporates the sourdough yeast better. Wow, just like using bread flour! 


Yogurt Day....on time change! Oh no! My 3 hours was probably four! I fell asleep and woke to the alarm. I used whole milk - the crockpot recipe by Simple Food Simple Life channel. 


Mary🌹, I got the whole milk from Dollar General and was very impressed with its taste and texture. I would much prefer farm brand but that just is not possible most of the time, and quite expensive when it is. For the probiotic yogurt, I used what I set aside from making Vietnamese yogurt and I got lucky. I am a stickler in trying to conserve and be frugal.

Now it's ready to rise in the bread pan. Time to take a shower. 
My place was a "soup kitchen" today, lol - I just hope they don't poison the leftovers. I had cooked lentil beans in the freezer. I had some V-8 veggie juice and homemade salsa so I combined them and it tastes pretty good and healthy. 

The towel I placed on it is that white thing in front. 
This picture is a bit creepy, not what it looks like - The crockpot has no chips in it and is completely clean all the way around.

My probiotic hydrating liquid is surprising me. 

This sour dough was taken out of the fridge, got room temp, I added whole wheat, 2T oatmeal, hydrating liquid, and kablammo, it is ready to use in less than an hour. 



THE TIMING WAS A PROBLEM. THE BREAD ROSE WHILE I WAS SLEEPING....

AND FELL WHEN I WAS SLEEPING.

BUT IT TASTES GOOD. LIGHT AND AIRY. I like to shake cinamon and sugar on a buttered piece when it is warm. This is the one I added 2T oatmeal and flax and chia seeds to the starter. If seeds are a problem to digest, this is one way to get the nutrition and have them digestible, from soaking in the starter. 

I always change jars after making the bread - feed it, then switch to a clean jar. I add my "hydration liquid" in the fridge - to the empty jar, shake it alot and pour it back into the hydration liquid. That is how I keep it going--long with adding homemade yogurt now and then; especially when it is "soupy". I could have added warm water to the jar before shaking it, then add that to the hydration liquid. The jar cleans better because you get more out and probably helps the hydration liquid more. 

Adding a tinge of homemade vanilla to the bread recipe is another way to make the most of it.

    CHOPPED VEAL IS GREAT FOR YOUR LIVER 

She made like a Spanish Rice w/out the rice, using veal and baking glasses with portions in drinking glasses and pastry dough. I have yet to see a drinking glass #MadeInUSA to withstand such heat. They break.
